Chicken Parmigiana

Chicken Parmigiana is one of the easiest, but most delicious favorites at our house!
Ingredients:
3-4 chicken breasts (depending on how many you and your family will eat)
Italian Breadcrumbs
1t Garlic Powder
1t Basil Leaves
Olive Oil
1 T Butter
1 Egg
1 package of Linguini
Marinara Sauce
Grated Mozzarella Cheese

Directions:
1. Melt butter slightly in microwave safe bowl, then add one beaten egg, a squirt of lemon juice, garlic powder and basil leaves to the mixture in bowl

2. Fill a small ziploc baggie with 1 cup of Italian Breadcrumbs.

3. Dip chicken breasts in liquid mixture in bowl. Move directly to ziploc bag of Italian breadcrumbs. Shake bag until chicken breast is covered.

4. Re-dip chicken in liquid mixture and place in bag once more. Shake until fully covered. Continue steps 3 and 4 until all chicken breasts are breaded.

5. Heat a large skillet on the stove with 2 T of olive oil in the sauce pan. Add all chicken breasts to the skillet.

6. Cook SLOWLY (my stove is on heat setting 4) , flipping often, until outsides are golden brown. If you cook too quickly, the outsides will burn and the inside will not be fully cooked.

7. While chicken is cooking, boil linguini until fully cooked.

8. Place linguini on plate to be served. Add fully cooked chicken breasts on top of noodles. Top with marinara sauce and shredded mozzarella cheese.



9. Serve with breadsticks!

10. Eat up!
